Venison & Beef Casserole

Feeds 6-8 people

COOKED IN THE AGA USING THE ROASTING OVEN AND THE SIMMERING OVEN

 

The Casserole

Ingredients

  • 800g Cubed organic Venison
  • 400g cubed organic Beef
  • 175g dried apricots soaked in ¼ pint water overnight
  • 220g Scrubbed and chopped Organic Carrots
  • 2 large organic onions, finely chopped
  • 2 sticks chopped organic celery
  • 1 large organic leek, chopped
  • 3 large cloves garlic, squashed
  • 2-3 tablespoons plain organic flour
  • 3 tablespoons oil
  • 1¾ pints organic beef stock made from beef bones
  • ½ pint red wine or plum wine

Method

Brown the cubed Venison and Beef in the oil and remove with a slatted spoon and set aside. Add the onions, leek, celery, garlic and carrots to the remaining oil and sauté for about 5 minutes. Remove from the pan and with the remaining oil (add a little more if you need to) stir in the flour and make a thick paste. Add the beef stock and chosen alcohol gradually and make into a thick sauce, then season to taste.

Pour into a large casserole dish with a lid and bring to boil on the boiling plate. Transfer to the simmering oven and leave for 2 – 3 hours. Remove and add the soaked apricots along with their water. Meanwhile, make the dumplings!

 

The Dumplings

Ingredients

  • 350g self-raising organic flour
  • 4 tablespoons mixed chopped herbs
  • 200g chilled and grated butter
  • Juice of 1 lemon
  • Beaten organic egg to glaze

Method

Put the flour and herbs into a large bowl, and grate in the butter and add seasoning. Make a well in the middle of the mixture; add the lemon juice and about 3 tablespoons of cold water. Mix to a soft dough and bring all together to form a ball. Roll out on a floured board and cut into round using a 7.5cm cutter. Make the dumplings about 5cm thick. Take the casserole out of the oven and drop in the dumplings in a circle, glaze with the beaten egg and bake for a further 45minutes.
