It’s here! December…Thrill or dread?

I love Christmas, I don’t love all the work but I do love log fires, mulled wine, roasts to keep out the cold, my AGA, family descending, mince pies, twinkling lights, decorating my tree (preferably when the children are in bed so they can’t interfere). That makes me sound like an over controlling monster and when it comes to my tree at Christmas that is a fairly accurate accusation. One year I brought two trees thinking that I would allow the kids free reign on one. It was torture. I had to look at that ill balanced riot of mis-matching colour for a whole month. In the end I stopped going into that room and my wine consumption went up considerably. Best to let the fairies do it whilst we slumber…I’m not kidding anyone but they are good to me, my family!

This recipe is a great and quick alternative to mince pies:

Spicy Christmas Traybake – as seen in Welsh Border Life

Serves 8


  • 6oz. butter
  • 6oz. caster sugar
  • 8oz. self-raising flour
  • 3 large free range eggs
  • I jar of mincemeat
  • 3oz dried cranberries
  • 1 orange
  • Teaspoon of cinnamon
  • 1 tbsp Demerara sugar


Line a small AGA Roasting tin with bake-o-glide.

Beat together the butter, sugar, flour, cinnamon and eggs until a soft dropping consistency.

Empty the jar of mincemeat and the cranberries into the bowl.

Grate the rind of the orange into the mixture and squeeze in the juice. Using a wooden spoon fold the ingredients all together and then spoon the mixture into the roasting tin and smooth the top.

Hang on the lowest set of runners in the roasting oven (2 oven AGA) with the Cold Plain Shelf on the second set of runners or the middle of the baking oven (3 or 4 oven AGA’s) and bake for about 30-35 minutes or until firm.

Allow to cool slightly before sprinkling on the Demerara sugar and dividing into portions.

This is wonderful to have with a cup of tea for elevenses but most delicious served warm with cream or custard.
