RED ONION AND BRIE FLAN

Serves 10

Ingredients

  • 8 oz shortcrust pastry
  • 5 eggs beaten
  • ½ pt single cream
  • 7 oz ripe Brie
  • 3 red onions, sliced
  • 4 oz grated Cheddar cheese, grated

Method

  1. Roll out the pastry and line a 10 in flan tin.
  2. Fry the onions in a little butter until tender and allow to cool.
  3. Place on the base of the pastry. Slice the Brie and place on the top of the onions.
  4. Beat together the cream and the eggs and pour over the onions.Top with the grated cheese and then place on the floor of the roasting oven for about 35 minutes until the pastry is cooked and the top is golden..
