A Simple but delicious Sherry Trifle for Christmas

BETTY’S RECIPE FOR SHERRY TRIFLE

  1. A large Jam Swiss Roll
  2. A packet of Raspberry Jelly
  3. A punnet of frozen or fresh Raspberries
  4. 2 tablespoons of Raspberry jam, warmed for spreading
  5.  A  glug of Sherry
  6. A carton of creamy custard
  7. A sprinkling of almond slices toasted in the AGA
  8. 1pt of double cream whipped

 

  1. Method
    Melt the jelly in ½ pt. of boiling water, and stir in another ½ pt. of cold water. Set aside to cool
    Break the Swiss Roll into pieces and line the base of a large green mixing jug
    Soak the Swiss roll with the sherry, and then add the raspberries. Spread the Jam over the raspberries, and then pour over the cooled jelly mix. Leave in the fridge to set.
    When the jelly has set, remove from the fridge and pour over the carton of creamy custard.

 

Whip the cream until fairly stiff using a KitchenAid mixer and spread over the custard. Sprinkle on the toasted almond slices and more decorations of your choice. Serve chilled from the fridge.
Done in a jiffy and truly delicious!
