Sue’s Banana, Date and Cashew Bars

May saw the opening of our new showroom, commonly known amongst the staff as the’ Betty Room’. It is in fact a cookware/homewares showroom/shop (I think I have all bases covered there!)

My contribution to these open days and big events in the Twyford’s calendar is as always food. Generally loaded with calories and I like to think tasting delicious.

Another momentous event at Twyfords is that Sue is back! We have all breathed a collective sigh of relief and calm and organisation seems to have regained its hold over us (she’s been gone a year…it’s been hellish). Nothing, it seems, can faze us now. Rather disturbingly though she appears to have lost quite a bit of weight. When she first stepped back over the threshold I had to run quick smart to see Chris in the showroom office and warn her that we seriously needed to up our game. Sue has achieved this remarkable transformation by cutting out sugar. All processed sugar. ..she is constantly reading labels. That and exercise. It seems to get us all in the end…well not me yet but soon maybe!

Ingredients

35g Raw cacao powder

180g Dates, chopped and pitted

60ml Coconut oil

240g Cashews

1.5 tsp Vanilla extract

200g Banana Mashed

Coconut flakes for decoration

 

  • 3/4/5 oven Aga. Grid shelf on the floor of the baking oven, cold plain shelf above on the second set of runners
  • 2 oven Aga. Heat the cold plain shelf up in the roasting oven for 20 minutes then transfer to the 3rd set of runners in the simmering oven. Place your tin on top of the grid shelf on the 2nd set of runners.
  • Conventional oven 160c/140c fan/Gas 3

 

  • 20cm lined square tin

 

  • Put all the ingredients in a food processor and blitz until smooth.
  • Pour into the tin and sprinkle with coconut flakes.
  • Bake for 40 mins or until firm to the touch. Allow to cool in the tin before slicing.

 

  • Stores for up to one week.

 

N.B Sue says she got the recipe from Nadine’s friend so she should get the credit…just as long as you know I can’t take the credit (or blame! Although I actually really like them).
