Lizzie’s Macaroni Cheese

The Summer holidays are here. Seven blissful or long (depending on your state of mind) weeks stretch out before you. What plans have you got? Do they all rely on good weather? My daughter is wanting to learn how to cook… she bakes cakes but now she wants to ‘help out’ more.

“Fantastic!” I respond less than convincingly. Undeterred she suggests we start with something  fairly simple which also happens to be her favourite and so I present to you: Lizzie’s Macaroni Cheese.  It looks like I shall be eating this at least once a week until I decide to point her in the direction of another simple classic Spag Bol! I just need to let go of the control freak tendencies first!

Macaroni Cheese

  • 250g macaroni
  • 1 red pepper, de seeded and chopped
  • Broccoli florets, about half a whole of a shop bought one
  • 1 heaped tbsp. butter
  • 2 tbsp plain flour
  • 450ml milk
  • Cheddar cheese, grated. As much or as little as you like…to your taste.
  • 1 tsp bround black pepper
  • 1 tsp mustard powder




(If not using an Aga pre heat your oven to 180C/160C fan)

  • Cook the macaroni according to packet instruction but for only ¾ of the time.
  • Drain and pour into oven proof serving dish and set aside.
  • Bring a pan of water to the boil on the boiling plate (or on a high heat on your hob) and add the broccoli…cook for 1 ½ minutes, drain and add to the pasta.
  • Thinly slice and chop the red pepper and sprinkle that on top of the pasta and broccoli.
  • Heat the butter on the simmering plate (or on a low heat on your hob) and when melted add the flour a bit at a time mixing it in with a wooden spoon until it is all combined into a sort of ball.
  • Now add the milk a little at a time stirring all the time…you are making a white sauce.
  • Beat the sauce with a whisk to make sure there are no lumps and add the pepper and mustard powder, bring to the boil to thicken.
  • Add the grated cheddar…you are now making a cheese sauce!
  • Pour the sauce over the pasta and vegetables and sprinkle over more grated cheddar.
  • 2 oven Aga: place on the lowest set of runners in the roasting oven with a cold plain shelf above on the 2nd set of runners
  • 3/4/5 oven Aga place on the 3rd set of runners in the baking oven.
  • Cook for 10-15 minutes.
  • (conventional oven place in the middle of your oven and cook as above)
