AGA Quiche Tin

KIWI LIME BISCUIT PIE

Delicious, perfectly sinful, scrumptious Kiwi Lime Biscuit Pie

(the only healthy ingredient in this recipe is the Kiwi fruit – so you are quite safe!)

Kiwi lime biscuit pie

 

250g crushed ginger biscuits

80g butter – melted

397g tin condensed milk

4 unwaxed limes zested and juiced

300ml double cream

2 ripe kiwi fruit

 

Line the Aga loose bottom quiche tin with bake o glide.

 

Mix the biscuits with the melted butter and blitz in the blender; tip into the base of the flan tin and press into the base and up the sides with the back of a spoon.

 

Bake on the floor of the baking oven for 10-15mins, remove from the oven and allow to cool.

 

Whisk the condensed milk and double cream together until thickened and then gradually add the lime zest and juice.

 

Spoon into the flan base and chill in the fridge. Meanwhile peel the kiwi fruit and slice.

 

After an hour remove and place the kiwi on top sprinkle with icing sugar and serve.
