Coronation Chicken |
Ingredients
Large Organic Chicken - 1 Sweet seedless green grapes - 450 grms onions - 2 Garlic - 1 clove Butter - 50 grms Salt and Pepper - 0 Mayonnaise - 250 ml Curry Powder - 1 desertspoon Greek Yoghurt - 500 ml

Method Roast Chicken in a roasting tin set on the lower set of runners. Cook for 3/4 - 11/2 hours, according to size, drizzle with oil and stuff the cavity with fresh herbs. Prepare the sauce. Saute the chopped onion in 50g butter, and add large dessert spoon of curry powder. Simmer gently. Add one clove of chopped garlic. Remove from heat to cool. Meanwhile, tip the contents of a large carton of Greek Yoghurt, and a medium jar of Helmans Mayonnaise into a mixing bowl. Stir in the curried onion and garlic mixture. Chop the seedless grapes in half, and add 450g grapes to the Yoghurt mix. Set aside for the ingredients to absorb.
When the chicken is cooked, leave aside to cool. Strip the carcas of its meat, and chop into bite sized pieces. Stir chicken into the creamy, fruity, curried mix. Serve cold with plain rice and a green salad. Perfect for eating outside. |
